Commonly known as Buffalo, bison are members of the cattle family who eat plants, primarily grasses, and chew their cud.
They are the largest wild land mammal in North American.
Buffalo can run at speeds in excess of 45 mph.
Compared to roasted, skinless chicken breasts, bison meat contains less fat, less calories, and 500% more iron.
Elk are members of the deer family.
Males grow and shed antlers each year.
They are herbivores, eating only plants including grasses, low-growing, short-stemmed plants, and even shrubs and trees.
Just like bison and cattle, they have a multi-chambered stomach and chew their cud.
Male elk make a distinctive "bugling" sound which can be heard for miles.
The most important people in the food chain are the primary producers, the farmers. All ordered meat is sourced from local southern Ontario farmers who practice ethical, sustainable methods.
All our buffalo are fully grassfed with no grain finishing.
Animals are hung for 14 days to dry-age, then cut, packaged and frozen at the abbatoir.
Each cut of meat has a unique inventory number which allows the product to be traced back to a particular farm and often the specific animal, as well as the abbatoir used.
Ground or stew cubes packages contain only the meat from a single animal.
